Ingredients:
2 cups milk (dairy or dairy-free) or unsweetened almond milk
2 Tbsp canned pumpkin puree
2 Tbsp sweetener (you can substitute maple syrup)
2 Tbsp vanilla extract
½ tsp pumpkin pie spice
½ cup of extra strong coffee or 2 shots of espresso (add more for a stronger coffee taste)
Toppings (Optional):
Whipped cream
Cinnamon powder, pumpkin pie spice or vanilla-infused sugar, for garnish
Directions:
In a small pan, set over medium heat, add the pumpkin puree, pumpkin pie spice and sweetener. Then whisk in milk.
Cook for 3-5 minutes, stirring occasionally, or until the mixture is steaming and dissolved. Be sure not to let boil. Remove from heat and stir in the vanilla extract.
Pour strong, hot coffee (or 2 shots of espresso) into a large mug and fill the rest with the pumpkin-spice-milk mixture.
Garnish with whipped cream and a few sprinkles of your preferred garnish, then drink immediately while hot. CS
