Hummingbird Mojito

A Sobo’s twist on a summertime classic, the Hummingbird Mojito is both elegant and refreshing. We pair El Dorado’s Light Rum with Pama Liqueur, to bring more excitement to this cocktail. A perfect balance of flavor is achieved by muddling the traditional mint with a little lime and simple syrup. If the final presentation of this cocktail doesn’t knock your socks off, the first sip might.

INGREDIENTS

1.5 oz El Dorado Light Rum

.75 oz pomegranate liquor

.75 oz simple syrup

1 whole strawberry

Half a lime

5-6 mint leaves

1 oz lemon-lime soda

INSTRUCTIONS
Cut half a lime and a whole strawberry into half-inch pieces; add fruit pieces, mint and simple syrup into mixing tin; muddle these ingredients. Pour rum and pomegranate liquor over the muddled mixture; add ice, and shake for 10-15 secs; pour, do not strain, contents of mixing tin into service glass; add a splash of lemon-lime soda and top with ice if needed.
