Ingredients
1½ lb shrimp, large, raw, peeled and deveined with tails on
1 Tbsp Ocean Pursuit Seasoning
2 garlic cloves, minced
2 Tbsp fresh cilantro, chopped
¼ cup olive oil
1 lime, juice and zest
Ingredients
Preheat the grill to medium-high heat. Add all the ingredients, except for the shrimp, into a bowl and mix well. Now add shrimp and gently mix. Cover the bowl and place in the refrigerator to marinate for 20-30 minutes. If using wooden skewers, be sure to soak them in water for at least 20 minutes before grilling.
Add the shrimp to the skewers and grill for a few minutes on each side. As soon as they are pink, take them off the heat so they don’t overcook. Garnish with fresh cilantro and wedges of lime. Serve with a side of garlic aioli and enjoy.
Chef tip: Don’t want to use skewers, no problem. Throw the marinated shrimp in a pan with a little butter and cook. You can do the same thing in the oven if you don’t have a grill.
