Tuscan Bean & Kale Soup
This soup is a real favorite for warming up on a cold winter day and is equally as good year-round. In fact, this soup is the definition of comfort food. There’s just something about this soup’s flavor and oh so good blending of ingredients that always hits the spot with this favorite.

COOK TIME: 25-30 min
Ingredients
2 Tbsp olive oil
1 large onion, chopped
3 garlic cloves, minced
1 tsp dried rosemary
1 tsp dried thyme
½ tsp red pepper flakes (option for heat)
2 cans cannellini beans, drained and rinsed
1 can diced tomatoes with juice
4 cups vegetable broth
2 cups fresh kale, stems removed, chopped
2 Tbsp fresh lemon juice
1 tsp salt (adjust to taste)
½ tsp ground black pepper (adjust to taste)
Instructions
Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté for 4-5 minutes. Stir in the garlic, rosemary, thyme and red pepper flakes (if using). Cook for 1 minute.
Add the cannellini beans, diced tomatoes with juice and vegetable broth. Stir well.
Bring the soup to a boil, then reduce the heat to low. Let it simmer for 15-20 minutes. Stir in the kale and simmer for another 5 minutes until wilted and tender. Stir in the fresh lemon juice and season with salt and black pepper to taste.
