Grilled Peach Sliders
Ingredients
1 large peach
1 lb Kirby Holloway sage sausage
1 Tbsp fresh thyme
1 small goat-cheese log
4 croissant buns
1 Tbsp EVOO
Salt and pepper (to taste)
Instructions
Mix sausage with thyme, salt and pepper. Form four loosely packed patties. Slice peach into largest pieces possible. Place in bowl and drizzle with extra virgin olive oil. Next, grill sausage sliders on high, 2-3 minutes each side, adding goat cheese after last flip and close lid to melt cheese. Allow the grill to cool down to a lower temperature and add sliced peaches. Grill on both sides to color. Assemble sliders and enjoy!
Peach Salsa
Ingredients
1 large peach
1 Vidalia onion
1 tomato
1 jalapeño
1 lime
Avocado and/or black beans (optional)
Instructions
Dice peach, onion, tomato and jalapeño, and place in bowl. Squeeze juice of 1 lime and salt to taste. Grab some tortilla chips and enjoy! CS
DESSERT, ANYONE?
For an after-dinner treat, serve one of the grilled peaches on top of a scoop of vanilla ice cream. The heat from the grilled peach softens the ice cream, and the syrupy sweetness from the juices will satisfy any sweet tooth.
