Grilled Mahi Tacos with Avocado Salsa

Mahi Ingredients
1 lb mahi fillets
1 tsp chili powder
1 tsp ground cumin
1 tsp smoked paprika
1/8 tsp cayenne pepper
1 lime
8-10 flour tortillas, warmed
Salt and pepper
EVOO (to drizzle on fish)

Avocado Salsa Ingredients
1 mango, diced
1 avocado, chopped
½ small red onion, finely chopped
¼ cup cilantro, chopped
Juice of one lime

Mahi Instructions
On a parchment lined sheet pan, lay out the fish in a single layer. In a small bowl combine the chili powder, cumin, paprika, cayenne pepper and good pinches of salt and pepper. Mix to combine.

Drizzle the fish with EVOO on both sides and then sprinkle the spices on both sides of the fish. Use your hands to gently rub the spices into the fish.

Heat your grill or pan to medium-high heat. Grill/cook the mahi for about 5 minutes per side, until it easily flakes with a fork. Transfer to a plate to allow to rest for a few minutes. Drizzle with EVOO again, if desired.

Avocado Salsa Instructions
Combine and mix ingredients in a medium-sized bowl and set to the side or place in refrigerator.

To Char Tortilla
Use tongs to hold over the open flame on a gas stove. The flame should be on it’s lowest setting. It should take about 1-2 minutes. If you don’t have a gas stove, put the tortillas on a cookie sheet and place under the broiler for a few seconds.

Assembly
Plate the mahi in a tortilla, top with avocado salsa and enjoy.
