Avocado Toast & Egg

Yes, there’s a lot you can do with an avocado and here’s one of them. This recipe is easy to make, healthy and even better to eat. It’s also a great lunch too. Not to mention there are endless ways to further customize this one.

Ingredients
2 servings
2 eggs
2 slices multigrain bread
1 teaspoon butter
1 ripe avocado, pitted, peeled
1 teaspoon lemon juice, or to taste
1 pinch of cracked black pepper
1 pinch of sea salt

Directions

The Eggs:
Melt butter in a skillet over medium-low heat. Crack both eggs into the skillet and cook side by side until the eggs are white on the bottom layer and firm enough to flip, about 2 to 3 minutes. Flip eggs, trying not to crack the yolk, and cook until egg reaches desired doneness, 2 to 4 minutes more.

The Toast & Avocado:
Toast the 2 bread slices to your liking – multigrain, sourdough or another favorite of yours. Mash the avocado in a bowl; stirring in lemon juice, pepper, and salt then spread it onto the toast. Top with each piece of toast with your fried egg and then further season to your liking – maybe even a dash of hot sauce for a little added kick.
