A refreshing and easy-to-make drink that can be made family style or for adults only
Ingredients
1 cup fresh blueberries
1 cup fresh lemon juice (approx. 4–6 lemons)
¾ cup granulated sugar
4 cups cold water
4-5 sprigs fresh thyme
Ice, for serving
Instructions
1. Make the Herb Syrup:
In a small saucepan, combine the sugar, 1 cup of the water and the fresh thyme sprigs. Bring to a gentle simmer over medium heat, stirring until the sugar dissolves. Remove from heat and let steep for 10 minutes, then discard the thyme sprigs.
2. Puree the Berries:
Muddle or blend the fresh blueberries with a splash of water until smooth. Press the puree through a fine-mesh sieve into a large pitcher to remove the skins.
3. Mix:
Pour the fresh lemon juice, the cooled thyme simple syrup, and the remaining 3 cups of cold water into the pitcher with the blueberry juice. Stir well.
4. Serve:
Pour over ice and garnish with a fresh lemon wheel and a small sprig of thyme. (Optional: Add 1.5 oz of vodka per glass for a spiked beach cooler). CS
