4 oz. sriracha meat
1 slice pepper jack cheese
1 tsp. green scallions, chopped
Cook sausage in a pan. Use a separate 8-inch sauté pan and cook the eggs until they start to harden around the edges. Flip the eggs and then stuff the sausage meat into the eggs. Fold the eggs and top with pepper jack cheese, sriracha sauce and green scallions.
Serve with shredded potatoes (optional).
